When I saw the Trader Joe’s Dumpling Bake circulating on social media recently, I knew I had to recreate it. But I don’t live near a Trader Joe’s, so I turned to Delish’s Coconut-Lime Dumpling Bake instead.
Not only does the recipe sound delicious, but it also follows a formula I am familiar with from my time working at the Trader Joe’s “demo station.” Cheese and crackers were always a hit, but to mix it up, I’d come up with simple recipes that turned a few Trader Joe’s ingredients into a meal.
In a pre-social-media world (Instagram was invented in 2010! I’m not that old, I swear), this was one of the ways people learned to combine ingredients. Seeing people taste what I’d made, then buy all three ingredients to make it at home, is probably what it feels like to go viral on TikTok today.
Delish’s Coconut-Lime Dumpling Bake admittedly takes a few more ingredients than the TJ’s version, but it still requires minimal effort and is ready in about 30 minutes. Now, if I could just find a bag of dumplings that costs as little as it does at Trader Joe’s...
I’m going to be honest—even when a recipe doesn’t call for me to dump everything in a pan and swoosh it around until it seems right, that’s probably how I’m going to do it anyway. I just can’t be bothered to dirty multiple dishes and utensils for dinner most nights.
This recipe really understands that: Just whisk together all the sauce ingredients, place your dumplings in (all higgledy-piggledy or in nice rows, whichever works!), toss your bok choy over top, then bake! I actually didn’t cover mine with foil because I added extra vegetables (see below), and it turned out fine. Again, if you can’t be bothered to wrangle a box of foil, more power to you.
This recipe is SO easy, don’t overthink it. Truly, this is one you can break the rules with a little bit. I’ve added a bit more curry paste (I’m not putting a small jar with just a tiny bit of curry paste back in my fridge, absolutely not), tossed in different vegetables (even frozen ones!), and have used various brands of coconut milk to great effect. I’ve also added more or used fewer dumplings before, and eyeballed making this in pans of different sizes, and it’s always turned out great.
